Ingredients:
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon peppermint extract
  • 4 large egg yolks
  • 1/2 cup mini chocolate chips
  • 2-3 drops green food coloring (optional)
Preparation:
  1. Prepare the Base: In a medium saucepan, combine the cream, milk, sugar, and salt over medium heat. Stir until the sugar is dissolved, then remove from heat.
  2. Temper the Egg Yolks: In a mixing bowl, whisk the egg yolks. Gradually add 1/2 cup of the hot milk mixture to the yolks, whisking continuously to prevent the eggs from scrambling. Pour the tempered yolks back into the saucepan.
  3. Cook the Mixture: Return the saucepan to medium heat. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from heat and stir in vanilla, peppermint extract, and food coloring.
  4. Chill the Base: Pour the mixture into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours or until thoroughly chilled.
  5. Churn the Ice Cream: Attach the pre-frozen KitchenAid Ice Cream Maker Attachment to your stand mixer. Turn the mixer on low speed and pour in the chilled base. Churn for about 20-30 minutes until the mixture reaches a soft-serve consistency.
  6. Add Chocolate Chips: In the last 5 minutes of churning, add the mini chocolate chips and let them mix in evenly.
  7. Freeze: Transfer the ice cream to an airtight container. Freeze for at least 4 hours or until firm.

Yield: About 1.5 quarts of ice cream
Total Time: Approximately 8 hours (20 minutes prep, 30 minutes cooking, 4 hours chilling, 4 hours freezing)
